Located in the old village of Mougins, the restaurant is built on medieval walls. The latter has evolved over time. Property of the monks of the island of Lérins 400 years ago, this place was used as a mill, then transformed into a court, to finally accommodate the famous restaurant of Mr. Vergé which obtained two Michelin stars.
Today, bought by an English investor, the major restructuring operation consists of bringing the building, networks and kitchen up to standard. Intervening in the old village of Mougins has led us to offer an even more sensitive approach to our thinking and our work.
This project closely affects a rich historical heritage that has become particularly touristy. The restaurant has been designed with respect for this heritage and the emblematic elements of the Côte d´Azur, sun, landscape, vegetation. Our work therefore focused particularly on the brightness of the rooms while providing a strategic framework for the available viewpoints. This project tells the story of a meeting and a collaboration.
